Valentine’s Biscuits

You will need:

230g self raising flour
115g caster sugar
115g margarine/butter
1 large egg, lightly beaten
1 tsp  vanilla essence

Pre heat the oven to 180°C, fan 160°C.

Mix the flour and sugar together in a bowl, then rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

Add the egg and vanilla essence and mix to form a soft dough.

You can make them in a food processor, blitz the flour and sugar with the butter until the mixture resembles fine breadcrumbs then add the egg and vanilla essence and pulse until the mix starts to come together – tip out onto a lightly floured surface and bring together to form a soft dough.

Roll out onto a well floured surface to the thickness of a £1 coin and cut into shapes.  Place on greased baking sheets and bake for 10 minutes or until golden brown.

Remove from the baking sheets while still warm and leave to cool on wire racks. 

When cool decorate with royal or fondant icing.

To make lavender biscuits add 1 tbsp of dried lavender when you add the egg, roll, cut and bake as above and dust with caster sugar whilst still warm.
